The hands-on and total time figures published on this Site come from our own timed testing in a home kitchen using a standard kitchen timer. They are not laboratory measurements and will vary with your equipment, your knife skills, and your stove. Treat them as an honest estimate from our kitchen, not a guarantee for yours.
